Hầu như các quán phở đều bỏ bột ngọt không ít th́ nhiều, không riêng Bắc Kỳ mà khắp Sài G̣n sang đến nước ngoài.

Nấu ở nhà th́ họa may có một số người tránh bột ngọt mà dùng nước hầm xương.

Nhưng có người lại mua các bao gia vị phở trộn sẵn để đem về nấu, th́ trong đó lại có bao gồm bột ngọt luôn rồi.
