Trên 25 hội viên của Hội những người yêu phở “Seattle Pho-natics” trong số hội viên lên tới 147 người, đă tới thưởng thức Phở Số 1 – tại 1207 S.
Jackson St. Seattle vào chiều thứ Hai 27 tháng 3 vừa qua. Nhóm thưởng thức phở này thường nhóm họp hàng tháng qua việc đến ăn tại các tiệm phở Việt Nam trong vùng hoặc tự học về nấu phở thưởng thức chung tại nhà.

Seattle Pho-Natics Visit Pho So 1
So last Monday, I got two calls from the office. The first was to tell me that one of our main machines was infected with a virus, which would end up keeping me at the office until 5:30am. The second call was to tell me get ready to shoot some video of a local Pho Enthusiast group visiting a local Pho place in Seattle’s International District called Pho So 1, or “Pho Number 1.” Did I mention that Monday is when we go to print?
The Seattle Pho-Natics has a goal of collecting random strangers from the internet to visit a different Pho place every month, in order to sample all the local flavors. Fitting enough, “Pho So 1″ was the first Pho place they ever visited, although many of them were unhappy with the experience. After “Pho So 1″ acquired by new owners, who didn’t want to live in the shadow of the previous ones. The new owners contacted the group and asked them for a second chance.
This is my first real experience shooting video with my D7000, and it still takes some getting used to. Still, I had a lot of fun. The Pho there was good, and didn’t leave me feeling bloated with excessive the way that a lot of Pho places will.
The key to judging a good Pho place is whether the customers are there for the noodles, or if they’re there for the broth. Good broth takes time and money to produce, and if the customers don’t bother finishing it off, then the restaurant isn’t going to bother investing in it, because they would be throwing money down the drain. Good broth attracts good customers, and vice verse.
One girl who visited Vietnam told me that in Vietnam, the Pho consists mainly of broth, with very little meat and noodles. Which makes sense, because rice and beef in Vietnam is very expensive, so people tend not to overindulge. I ordered a bowl with everything, drank up all the broth, and left behind about half the noodles. Next time, I’ll probably order half to start with. It’s a good way to help you evaluate the quality without getting distracted.
The next time I go there, I’ll probably ask if I can order a beef bone directly.
Anyway, it’s almost 2am, and I’m still at the office. Time to head home
